Ingredients:
6 oz bow tie pasta
1 tbs olive oil (I used vegetable oil)
1 medium onion, chopped
1 cup sliced portobello or other fresh mushrooms (I used canned mushrooms)
2 cloves garlic, minced
4 cups spinach, thinly sliced
1 tsp fresh thyme leaves, chopped
1/8 tsp ground black pepper
2 tbs shredded Parmesan cheese
How To Cook:
Cook pasta according to package directions. Drain. 2. In a skillet, heat oil. Add onion, mushrooms and garlic and cook until tender. Stir in spinach, thyme and pepper and cook until spinach is slightly wilted. 3. Toss mushrooms and spinach mixture with pasta and sprinkle with cheese. MAKES 4 SERVINGS.
